AmeriPure was established in 1995 in response to eroding consumer confidence in raw shellfish. In recent years, government and consumer advocacy groups have issued increasingly severe public warnings about consumption of Gulf Coast oysters.
This concern focused on two naturally occurring bacterium, Vibrio vulnificus and Vibrio parahaemolyticus, that can be found in clean estuarine waters throughout the world.
Vibrio bacteria flourish at extremely high levels in warmer waters, such as the Gulf of Mexico. Vibrio vulnificus is potentially fatal to persons with weakened immune systems, and Vibrio parahaemolyticus can cause gastrointestinal illness in perfectly healthy consumers who eat shellfish with sufficient levels of the bacterium.
The AmeriPure Process® was invented as a practical, product-specific solution to the problems of increased regulation and eroding public confidence in Gulf Coast oysters. Louisiana State University's renowned Food Science department furthered the research as their food scientists fine-tuned the process and documented the results in a comprehensive research study that was published and peer reviewed in 1996.
In 1997, The AmeriPure Process® was deemed so effective that the State of Louisiana dropped its mandatory retail warning sign requirement for establishments that exclusively serve raw oysters that have undergone our treatment. Additionally, in 2003 the State of California decided AmeriPure's products are exempted from its seasonal prohibition (April 1st through October 31st) on the sale and distribution of raw oysters harvested from the Gulf of Mexico.

In 2015, AmeriPure broadened our oyster footprint by taking a significant interest in Hollywood Oysters, based out of Hollywood, MD. We are proud to be a part of the innovative Hollywood farm oyster operation. The oyster farm is located on a 300-acre plot of land adjacent to several thousand acres of conservation land and state parks. It is also located alongside the Patuxent River, which is the deepest river on the East Coast. Hogs Neck Creek has a clay/sand bottom and is lined with fossilized rock, which gives our oysters their delicious signature taste that you won’t find anywhere else! Hollywood Oyster farm sustainably contributes to the restoration of the Chesapeake Bay, with its millions of oysters filtering the waters and by its creation of habitat in and around its thousands of growing cages.

Longer Shelf Life
We guarantee a 16-day shelf life from the date of processing for properly handled half-shell product and a 21-day shelf life for shucked product.
Our oysters do not open until you are ready to use them. What's more, we guarantee counts for our half-shell product. When you order a 100-count case, you get a minimum of 100 raw oysters that you can serve with confidence to your customers. Like all of our Ten Commitments, if we don't deliver our accurate counts, you don't pay for the oysters. It's that simple.
Our oysters are graded to ensure half-shell acceptability and are individually banded.
All of our oysters are regularly batch-tested before and after processing for Vibrio bacteria.
